Harvest is about three weeks out, and this is the part of the year I like almost as much as the digging itself. Nothing's happening yet. Everything is about to.
What getting ready looks like
Out in the field, the plants are on their last stretch. The husks went orange last month and now the leaves are starting to yellow at the edges, which is exactly what we want to see. The plant is pulling everything it can down into the root. We're waiting on a run of cold nights, three or four in a row, to knock the tops back for good. Then we go in.
Between now and then, the work is all preparation. The forks come out of the shed and get their tines straightened. The crates get scrubbed. The workshop gets cleared down to bare counters, because the day the roots come up, every surface is going to be covered in them. Jars washed, lids counted, alcohol on hand. The scale calibrated. We even sweep the floor, which tells you how much we've got to do.
There's something good about a job where the whole point is to make space for what's coming. Most of the year you're adding. This month you're subtracting. Clearing. Getting out of the way.
Why the same is true of the shelf
